This strain was selected for its high power of colonization of grape musts, the maintenance of its population during alcoholic fermentation, and its tolerance to SO2, copper, and alcohol.<\/p>\n<p>It is recommended for:<br \/>\n\u2022 Full-bodied and fruity red wines.<br \/>\n\u2022 Enhanced expression of varietal characters of white and ros\u00e9 wines.<br \/>\n\u2022 Higher aromatic complexity and intensity.<\/p>\n<\/div>\n<div id=\"tab_trials\" class=\"panel entry-content\" role=\"tabpanel\" aria-labelledby=\"tab-trials\">\n<p>A trial was conducted on Chardonnay grapes from the Loire Valley (vintage 2024). The grapes were harvested by hand, then destemmed, pressed, and the juice clarified with enzymes. A 3 g\/hL sulfite addition was made at the start of fermentation (day 0).<\/p>\n<p>Fermentation nutrition was adjusted to reach a nitrogen-to-sugar ratio of 0.8 mg\/g, with DAP (20 g\/hL) and SpringFerm\u2122 Equilibre (20 g\/hL) both added on day 0.<\/p>\n<p>The study compared five <em>Torulaspora<\/em> <em>delbrueckii<\/em> strains as candidates (Td1 to Td4, and Saf<span class=\"TextRun SCXW121710175 BCX8\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"none\"><span class=\"NormalTextRun SpellingErrorV2Themed SpellingErrorHighlight SCXW121710175 BCX8\">\u0152<\/span><\/span>no\u2122 Amplify TD-70), two commercial <em>T. delbrueckii<\/em> strains, and one control without <em>T. delbrueckii<\/em>.<\/p>\n<p>The yeast inoculation followed a two-step strategy:<br \/>\n\u2022 Day 0: each modality (except the control) was inoculated with its respective <em>T. delbrueckii<\/em> strain at 20 g\/hL, with fermentation starting at 17\u00b0C.<br \/>\n\u2022 Day 3: all modalities were inoculated with Saf<span class=\"TextRun SCXW121710175 BCX8\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"none\"><span class=\"NormalTextRun used; it received only Saf<span class=\"TextRun SCXW121710175 BCX8\" lang=\"EN-US\" xml:lang=\"EN-US\" data-contrast=\"none\"><span class=\"NormalTextRun SpellingErrorV2Themed SpellingErrorHighlight SCXW121710175 BCX8\">\u0152<\/span><\/span>no\u2122 VR44 (20 g\/hL) on day 0.<\/p>\n<p>Chemical characteristics of the must: Sugars: 210 g\/L ; pH: 3.04 ; Total acidity: 5,76 g\/L H2SO4 ; Titrable acidity: 8,7 g\/L tartaric acid ; YAN: 82 mg\/L.<\/p>\n<p>The alcoholic fermentation, ensured by the combination of<strong> Saf<span class=\"TextRun SCXW121710175 BCX8\" lang=\"EN-US\"
