Esto representa cientos de miles de productores con cientos de variedades de uva diferentes y un enorme n\u00famero de tipos de vino. Pero, m\u00e1s all\u00e1 de las diferencias sensibles, hay una tendencia que lleva a buscar fermentaciones y, por tanto, levaduras que puedan desarrollar y potenciar los aromas t\u00edpicos de la variedad de uva y de la zona de cultivo. En los vinos blancos, adem\u00e1s de los aromas varietales, los en\u00f3logos buscan ramilletes de aromas frescos y sensaciones complejas de fruta fresca, c\u00edtricos y flores de primavera. En los tintos m\u00e1s j\u00f3venes, buscan equilibrios entre las sensaciones de peque\u00f1os frutos rojos y especias diversas combinadas con un equilibrio t\u00e1nico y de cuerpo. Todos mis clientes quieren crear un vino distinto de los dem\u00e1s y mi trabajo consiste en aportar soluciones e ideas diferentes para satisfacer sus necesidades. Podr\u00eda hablarle de uno de mis clientes, hace unos a\u00f1os, que se qued\u00f3 con vinos blancos que no se ajustaban a las peticiones modernas. Tras largas conversaciones y pruebas, consigui\u00f3 cambiar su tipolog\u00eda, implantando una nueva tecnolog\u00eda de nutrici\u00f3n que combina SpringArom\u00ae y ViniLiquid\u2122 y fermenta con la levadura Saf\u0152no\u2122 CKS102. Sin duda, una de las m\u00e1s importantes es la pasi\u00f3n y la admiraci\u00f3n sincera por la transformaci\u00f3n de materias primas relativamente sencillas en productos alimentarios extraordinarios y no del todo conocidos. El vino y su evoluci\u00f3n a lo largo de los a\u00f1os es uno de los ejemplos m\u00e1s interesantes y extraordinarios. El en\u00f3logo tiene que impulsar estos procesos con lo mejor que la biotecnolog\u00eda puede ofrecer hoy en d\u00eda.
