Los climas m\u00e1s soleados permiten que las uvas maduren plenamente, rindiendo m\u00e1s de 220 g\/l de az\u00facar, y permiten mayores tasas de fotos\u00edntesis y acumulaci\u00f3n de antocianos, taninos y precursores arom\u00e1ticos.<br data-source=\"\n\">Este enfoque racional de la viticultura tambi\u00e9n se ha aplicado en muchas partes del Viejo Mundo, donde se han logrado algunos vinos notables, como los vinos Ribera del Duero, Priorato, Toro y La Mancha de Espa\u00f1a, el vino siciliano de Italia, el vino Languedoc de Francia y el vino b\u00falgaro.<br data-source=\"\n\">En Chile y Argentina, las uvas se cultivan a mayor altitud que en casi ning\u00fan otro lugar del mundo, lo que las dota de mayor cuerpo y permite crear los excepcionales vinos tintos que disfrutan los consumidores de todo el mundo. Malbec, Cabernet Sauvignon, Tannat, Petit Verdot, Carmenere, Syrah e incluso Bonarda en Argentina son algunas de las variedades m\u00e1s expresivas utilizadas para lograr este estilo de vinos tintos (casi negros) con cuerpo, intensamente afrutados y profundos. Sin embargo, en los vinos con un alto contenido fen\u00f3lico, hay que tener cuidado de no perder las cualidades de armon\u00eda, complejidad, elegancia y equilibrio.<\/p>\n<p><br data-source=\"\n\"><\/p>\n<h4><strong>\u00bfQu\u00e9 recomienda a los en\u00f3logos que vigilen?<\/strong><\/h4>\n<p><br data-source=\"\n\"><\/p>\n<p>Muchos vinos tintos profundos pueden ser agradables a la vista pero ocultar defectos fen\u00f3licos, ser astringentes y qu\u00edmicos, con una nariz de clavo y un final amargo y seco en boca que, en lugar de invitar a otro sorbo, puede incluso requerir agua para refrescar la boca. Nunca hay que perder de vista el equilibrio y el balance.
