Dans la fabrication de la bi\u00e8re, la situation est tr\u00e8s diff\u00e9rente.<br data-source=\"\n\n\">La levure Brett est tr\u00e8s romantique : elle a un c\u00f4t\u00e9 sauvage, impr\u00e9visible, donne des notes funky \u00e0 la bi\u00e8re et \u00e9volue dans le temps. Historiquement, il est utilis\u00e9 sans contr\u00f4le, dans les fermentations spontan\u00e9es, notamment dans les styles de bi\u00e8re comme la Geuze. <strong>Exploiter une telle levure, la rendre contr\u00f4lable et dans une certaine mesure pr\u00e9visible, est depuis un certain temps d\u00e9j\u00e0 un objectif ambitieux pour Fermentis.<\/strong> Et notre \u00e9quipe d\u2019experts en bi\u00e8re, dont de nombreux Belges, a rendu cet objectif encore plus personnel. Le nom scientifique de la souche est bien s\u00fbr Brettanomyces bruxellensis.<br data-source=\"\n\n\">Alors que les brasseurs deviennent de plus en plus cr\u00e9atifs, \u00e0 la recherche de styles inhabituels et de saveurs exceptionnelles, nous savions que si nous pouvions r\u00e9ussir \u00e0 produire la toute premi\u00e8re levure Brett s\u00e9ch\u00e9e, nous offririons quelque chose de nouveau et de sp\u00e9cial aux brasseurs du monde.<br data-source=\"\n\n\">Et c\u2019est ce que nous avons r\u00e9alis\u00e9 avec SafBrew\u2122 BR-8.<br data-source=\"\n\"><\/p>\n<h3><strong>Comment a-t-il \u00e9t\u00e9 d\u00e9velopp\u00e9 ?<\/strong><\/h3>\n<p><br data-source=\"\n\">Le d\u00e9veloppement de SafBrew\u2122 BR-8 a probablement \u00e9t\u00e9 le plus grand d\u00e9fi de R&amp;D de l\u2019histoire de Fermentis. L\u2019ampleur in\u00e9gal\u00e9e des efforts et des recherches consacr\u00e9s \u00e0 ce produit innovant le rend d\u2019autant plus sp\u00e9cial pour nous.<br data-source=\"\n\n\"><strong>L&#039;ensemble de la phase de d\u00e9veloppement du produit s&#039;\u00e9tend sur une p\u00e9riode de pr\u00e8s de 10 <\/strong><strong>ann\u00e9es, depuis l\u2019isolement de la souche initiale de levure jusqu\u2019\u00e0 sa production et son s\u00e9chage r\u00e9ussis.<\/strong><br data-source=\"\n\n\">Au cours de ces ann\u00e9es, nous avons \u00e9t\u00e9 confront\u00e9s \u00e0 de nombreux d\u00e9fis de taille, qui ont n\u00e9cessit\u00e9 des machines sp\u00e9cifiques dans de nouvelles usines de production pour filtrer avec succ\u00e8s ce micro-organisme, dont la taille est consid\u00e9rablement plus petite que nos levures habituelles.<br data-source=\"\n\n\">Il s\u2019est \u00e9galement av\u00e9r\u00e9 assez sensible \u00e0 la dynamique de temp\u00e9rature. Cela signifie qu\u2019il a fallu proc\u00e9der \u00e0 des tests approfondis pour atteindre le meilleur \u00e9quilibre entre le pourcentage de mati\u00e8re vivante s\u00e8che et la viabilit\u00e9 des cellules de levure.<br data-source=\"\n\n\">Bien s\u00fbr, apr\u00e8s les premi\u00e8res productions pilotes, <strong>nous avons effectu\u00e9 des essais et des tests pour nous assurer que ce Brett s\u00e9ch\u00e9 \u00e9tait aussi fiable que notre gamme actuelle, que la dur\u00e9e de conservation n&#039;\u00e9tait pas un probl\u00e8me, que les saveurs produites \u00e9taient celles attendues et typiques de cette souche de levure sauvage.<\/strong><br data-source=\"\n\n\">Et ce n\u2019est qu\u2019apr\u00e8s ces nombreuses ann\u00e9es de R&amp;D, qui ont comport\u00e9 leur lot de triomphes et d\u2019\u00e9checs, que nous avons pu lancer officiellement et en toute confiance SafBrew\u2122 BR-8.<br data-source=\"\n\"><\/p>\n<h3><strong>A quoi \u00e7a sert ?<\/strong><\/h3>\n<p><br data-source=\"\n\"><strong>SafBrew\u2122 BR-8 est principalement recommand\u00e9 pour le conditionnement en bouteille et la production de ph\u00e9nols sp\u00e9cifiques lors de la refermentation en bouteille :<\/strong> 4-\u00e9thylguaiacol et 4-\u00e9thylph\u00e9nol (notes funky telles que cheval, ferme, animal, cuir\u2026).<br data-source=\"\n\n\">Notre levure Brett assimile le glucose, le maltose et le maltotriose. Il n&#039;assimile pas les sucres plus complexes comme les dextrines, ce qui le rend plus pr\u00e9visible que les levures Brett compl\u00e8tement \u00ab sauvages \u00bb. Cela signifie que nous avons r\u00e9ussi \u00e0 ma\u00eetriser la b\u00eate, la rendant plus fiable, r\u00e9p\u00e9table et moins sujette \u00e0 la sursaturation ou au jaillissement.<br data-source=\"\n\n\"><strong>Comme la levure consommera une grande partie du sucre r\u00e9siduel, elle produira une signature Brett distinctive, pour une bi\u00e8re tr\u00e8s rafra\u00eechissante et tr\u00e8s buvable. <\/strong><br data-source=\"\n\"><br data-source=\"\n\n\">Le micro-organisme Brett fermente lentement et n\u00e9cessite un temps de maturation long, allant d&#039;un mois \u00e0 6 mois ou plus. SafAle\u2122 F-2 est \u00e9galement une souche de levure con\u00e7ue pour la refermentation en bouteille, mais il s&#039;agit davantage d&#039;une souche de levure purement \u00ab technique \u00bb,
