L\u2019objectif de ce programme est de guider et informer nos clients sur les avantages de nos levures, en particulier pour l\u2019expression des ar\u00f4mes. Tout a commenc\u00e9 avec le <em>Baseline Flavor &amp; Aromas<\/em>, une \u00e9tude sensorielle men\u00e9e dans des conditions standards qui r\u00e9pertorie la position et les repr\u00e9sentations de toutes nos levures de bi\u00e8res selon trois profiles importants d\u2018ar\u00f4mes pour la fermentation : leur caract\u00e8re fruit\u00e9, \u00e9pic\u00e9 ou neutre. Avec des techniques plus larges et une information organoleptique, nous fournissons \u00e0 nos brasseurs tout ce qu\u2019ils doivent savoir sur le comportement en fermentation de <em>SafLager\u2122 W-34\/70<\/em> ainsi que ses expressions sensorielles d\u00e9taill\u00e9es. C\u2019est une information affin\u00e9e qui vise \u00e0 aider au meilleur et bon choix pour la fermentation basse, nous permettant d\u2019\u00e9valuer comment les param\u00e8tres (comme la densit\u00e9 du mo\u00fbt, la temp\u00e9rature de fermentation, et le taux d\u2019ensemencement) pouvait modifier le profil neutre de fermentation de cette levure sp\u00e9cifique. A partir de ces diff\u00e9rentes conditions \u00e9tudi\u00e9es (nous en avons repr\u00e9sent\u00e9 six ci-dessous) nous avons obtenu une matrice qui nous aide a caract\u00e9riser ce qui ce passe lorsqu\u2019on change une variable pr\u00e9cise.<\/p>\n<p>Certains param\u00e8tres ont plus d\u2019impact que d\u2019autres sur le comportement de fermentation et l\u2019expression des ar\u00f4mes. Nous devons prendre en consid\u00e9ration certaines conclusions importantes lorsqu\u2019on utilise <em>SafLager\u2122 W-34\/70 : plus la temp\u00e9rature de fermentation est basse ou plus la densit\u00e9 est \u00e9lev\u00e9e, plus le temps de fermentation sera long. Cependant, en augmentant la temp\u00e9rature de fermentation, vous pouvez r\u00e9duire le temps de fermentation -sans affecter l\u2019ar\u00f4me neutre de la bi\u00e8re !<\/em><\/p>\n<p>Nous avons \u00e9galement d\u00e9montr\u00e9 que la densit\u00e9 du mo\u00fbt est le param\u00e8tre ayant l\u2019impact le plus important sur la bi\u00e8re finale, principalement en augmentant la perception en alcool et la chaleur\/sensation en bouche, ainsi que le degr\u00e9 de douceur. Les caract\u00e9ristiques telles que les notes fruit\u00e9es, florales ou sulfur\u00e9es ne varient pas significativement dans des conditions diff\u00e9rentes, ni \u00e0 forte temp\u00e9rature de fermentation ! Le r\u00e9sultat ? la surprenant neutralit\u00e9 qui caract\u00e9rise <em>SafLager\u2122 W-34\/70 reste constante -comme vous pouvez le voir sur le graphique araign\u00e9e dans lequel les profils sensoriels sont tr\u00e8s proches les uns des autres. Cette levure reste tr\u00e8s solide et stable dans de nombreuses conditions diff\u00e9rentes.<\/em><\/p>\n<p>Le point le plus important pour le brasseur est ceci : <em>SafLager\u2122 W-34\/70 peut garantir un profil de fermentation \u00e0 la fois plus rapide et neutre \u00e0 des temp\u00e9ratures \u00e9lev\u00e9es.
