L&#8217;ann\u00e9e derni\u00e8re, notre repr\u00e9sentant commercial m&#8217;a parl\u00e9 de Anne et nous avons pris rendez-vous. Je suis une grande amatrice de vins fran\u00e7ais et c&#8217;\u00e9tait l&#8217;occasion id\u00e9ale d&#8217;en savoir plus sur les produits utilis\u00e9s pour cr\u00e9er le style fran\u00e7ais. J&#8217;aime particuli\u00e8rement le Sauvignon Blanc et j&#8217;exp\u00e9rimente beaucoup avec cette vari\u00e9t\u00e9. J&#8217;\u00e9tais donc tr\u00e8s enthousiaste quand Anne m&#8217;a parl\u00e9 de cette levure.<\/p>\n<p class=\"lead\">Quels \u00e9taient les r\u00e9sultats les plus importants pour vous d&#8217;un point de vue cin\u00e9tique, analytique et sensoriel\u00a0?<\/p>\n<p>Les cin\u00e9tiques les plus importantes pour moi sont celles o\u00f9 la levure ne mousse pas\/ne flocule pas, o\u00f9 la courbe de fermentation est pr\u00e9visible et, plus important encore, qu&#8217;elle ait achev\u00e9 une frementation compl\u00e8te. Et cette levure a assur\u00e9ment rempli tous ces crit\u00e8res.<\/p>\n<p>L&#8217;analyse \u00e9tait similaire \u00e0 celle d&#8217;autres levures pour Sauvignon blanc que j&#8217;utilise, ce qui est formidable. Le degr\u00e9 Brix de conversion d&#8217;alcool est tr\u00e8s important pour moi, et je suis contente qu&#8217;il corresponde aux autres produits que j&#8217;utilise.<\/p>\n<p>Le profil sensoriel est l&#8217;aspect le plus important d&#8217;un vin, n&#8217;est-ce pas ? Et c&#8217;est l\u00e0 que Saf\u0152no\u2122 SH 12 m&#8217;a le plus impressionn\u00e9. Le mieux dans cette levure est ce qu&#8217;elle a apport\u00e9 \u00e0 la sensation en bouche du vin, elle a vraiment apport\u00e9 une densit\u00e9 intense en bouche, ce qui est une belle caract\u00e9ristique. J&#8217;ai trouv\u00e9 que cette levure avait adouci et int\u00e9gr\u00e9 le profil acide de mani\u00e8re harmonieuse et cr\u00e9\u00e9 une richesse et un fini que les autres levures n&#8217;apportent pas. C&#8217;\u00e9tait le point le plus impressionnant que j&#8217;ai pu observer en utilisant cette levure.<\/p>\n<p class=\"lead\">Avez-vous utilis\u00e9 l&#8217;ensemencement direct E2U pour cet essai\u00a0?<\/p>\n<p>Non, nous avons d\u00e9cid\u00e9 de laisser la levure se reproduire pendant 30 minutes et de l&#8217;ensemencer dans le jus, car le jus \u00e9tait plut\u00f4t froid et j&#8217;\u00e9tais donc inqui\u00e8te pour le d\u00e9marrage.<\/p>\n<p class=\"lead\">Le Sauvignon Blanc que vous avez produit correspond-il \u00e0 vos standards ou est-il plut\u00f4t meilleur ?<\/p>\n<p>Plut\u00f4t meilleur &#8211; voir plus haut. Je pense que cela ajoute une qualit\u00e9 suppl\u00e9mentaire, car cela r\u00e9v\u00e8le des saveurs riches tout en pr\u00e9servant la fra\u00eecheur. C&#8217;est vraiment agr\u00e9able.<\/p>\n<p class=\"lead\">Recommanderiez-vous cette levure et pourquoi\u00a0?<\/p>\n<p>Absolument. J&#8217;aimerais qu&#8217;elle fasse r\u00e9guli\u00e8rement partie de notre programme SB.<\/p>\n<p class=\"lead\">Y avait-il des points d&#8217;attention particuliers \u00e0 l&#8217;utilisation ?<\/p>\n<p>Elle a cr\u00e9\u00e9 de la complexit\u00e9 dans le vin et des saveurs fruit\u00e9es autres que les notes citriques classiques que nous obtenons habituellement.<\/p>\n<p class=\"lead\">Quelle est votre production globale\u00a0?
