Nous travaillons avec une \u00e9quipe technique conseill\u00e9e par Hans Vinding Diers, un consultant international, et nous essayons toujours d&#8217;obtenir la meilleure qualit\u00e9 et d&#8217;optimiser le potentiel des caract\u00e9ristiques des terres. Le domaine est situ\u00e9 pr\u00e8s du spa Jos\u00e9 Ignacio, \u00e0 un peu plus de 5 km de l&#8217;oc\u00e9an et \u00e0 30 km de Punta del Este. Nous essayons de capturer l&#8217;influence de l&#8217;oc\u00e9an dans les vins que nous produisons.<\/span><\/p>\n<p class=\"lead\"><span style=\"font-size: 85%\">Comment vous \u00eates-vous retrouv\u00e9 \u00e0 participer \u00e0 la d\u00e9gustation internationale des produits exp\u00e9rimentaux de Fermentis\u00a0?<\/span><\/p>\n<p>En plus d&#8217;\u00eatre l&#8217;\u0153nologue de la soci\u00e9t\u00e9, je suis aussi le repr\u00e9sentant de Fermentis en Uruguay, et c&#8217;est ainsi que j&#8217;ai eu l&#8217;opportunit\u00e9 de conna\u00eetres les nouveaut\u00e9s qui sortent chaque ann\u00e9e. Cette double fonction me permet \u00e9galement de tester les produits, d&#8217;accumuler plus d&#8217;informations et de pouvoir recommander ou sugg\u00e9rer des options \u00e0 nos clients.<\/p>\n<p class=\"lead\"><span style=\"font-size: 85%\">Quels ont \u00e9t\u00e9 les r\u00e9sultats obtenus les plus importants d&#8217;un point de vue cin\u00e9tique, analytique ou sensoriel avec le nouveau d\u00e9veloppement ?<\/span><\/p>\n<p>On a observ\u00e9 des cin\u00e9tiques fermentaires tr\u00e8s \u00e9gales, avec des besoins nutritionnels normaux, et une expression tr\u00e8s fruit\u00e9e d\u00e8s le d\u00e9but de la fermentation, ainsi qu&#8217;une grande intensit\u00e9 aromatique, ce que nous recherchons pour le Tannat. D&#8217;un point de vue sensoriel, nous avons \u00e9galement remarqu\u00e9 une finesse int\u00e9ressante dans les tannins, une texture tr\u00e8s agr\u00e9able, que l&#8217;on retrouve encore aujourd&#8217;hui.<\/p>\n<p class=\"lead\"><span style=\"font-size: 85%\">Quel r\u00f4le les contributions oenologiques utilis\u00e9es dans le processus de fermentation devraient-elles remplir ?<\/span><\/p>\n<p>Ce sont des outils qui contribuent \u00e0 l&#8217;obtention de r\u00e9sultats conformes aux objectifs dans la production de vin. Notamment, les levures et d\u00e9riv\u00e9s de levure doivent garantir une fermentation compl\u00e8te et donner au vin des caract\u00e9ristiques agr\u00e9ables.<\/p>\n<p class=\"lead\"><span style=\"font-size: 85%\">Avez-vous trouv\u00e9 une souche commerciale se rapprochant de l&#8217;objectif sensoriel que vous recherchiez\u00a0?<\/span><\/p>\n<p>Nous sommes en recherche, avec un objectif clair pour chaque type de vin, et une perspective en termes de caeact\u00e9ristiques sensorielles et d&#8217;expression de la terre. Pour chaque cas sp\u00e9cifique de Tannat nous voulons certaines notes qui identifient l&#8217;origine, des caract\u00e9ristiques aromatiques tr\u00e8s sp\u00e9cifiques qui se retrouvent dans nos vins et qui rappellent les algues, ainsi que des notes d&#8217;eucalyptus et des notes tr\u00e8s int\u00e9ressantes de fruits rouges m\u00fbrs. Dans ce parcours de recherche, nous avons test\u00e9 diff\u00e9rentes levures, incluant celles provenant du vignoble lui-m\u00eame, et cette combinaison sp\u00e9cifique de levures et de polysaccharides propos\u00e9e par Fermentis nous a aid\u00e9s \u00e0 atteindre notre objectif.<\/p>\n<p class=\"lead\"><span style=\"font-size: 85%\">Saviez-vous que Lesaffre est sp\u00e9cialis\u00e9, entre autre, dans la production de souches sp\u00e9cifiques destin\u00e9es \u00e0 ses clients par l&#8217;interm\u00e9diaire de la division Fermentis ? Seriez-vous int\u00e9r\u00e9ss\u00e9s \u00e0 analyser la production de souches natives avec le syst\u00e8me E2U<strong>\u2122<\/strong>\u00a0?<\/span><\/p>\n<p>C&#8217;est une proposition tr\u00e8s int\u00e9ressante, car nous nous trouvons dans une zone aux conditions climatiques excellentes pour le d\u00e9veloppement du vignoble. Aussi, \u00eatre en mesure d&#8217;utiliser nos propres souches de levure pourrait nous aider \u00e0 atteindre l&#8217;objectif d&#8217;expression et d&#8217;authenticit\u00e9 dont je parlais tout \u00e0 l&#8217;heure.<\/p>\n<p class=\"lead\"><span style=\"font-size: 85%\">Quelle importance occupe le Tannat dans la production de votre domaine viticole\u00a0?<\/span><\/p>\n<p>Une grande importance, c&#8217;est la souche la plus d\u00e9velopp\u00e9e dans notre vignoble. De plus, c&#8217;est l&#8217;un de nos plus gros d\u00e9fis, car nous recherchons encore la meilleure version de Tannat possible sur une terre dot\u00e9e de ces caract\u00e9ristiques.
