Sa cin\u00e9tique de fermentation assez lente est tr\u00e8s adapt\u00e9e aux vins n\u00e9cessitant une mac\u00e9ration fermentaire de plus de 10 jours permettant au producteur d&#039;\u00e9laborer des vins \u00e9l\u00e9gamment structur\u00e9s.
