Dans les vins blancs ou ros\u00e9s, id\u00e9alement, saupoudrer directement la levure dans la cuve de fermentation lors du remplissage (apr\u00e8s d\u00e9bourbage) pour assurer une bonne homog\u00e9n\u00e9isation. Alternativement, verser la quantit\u00e9 d\u00e9sir\u00e9e de levure sur la surface d&#039;au moins 10 fois leur poids de mo\u00fbt. Remuez d\u00e9licatement pour \u00e9viter les grumeaux. Transf\u00e9rer imm\u00e9diatement dans la cuve et homog\u00e9n\u00e9iser toute la masse.<\/li>\n<li>Avec <strong>r\u00e9hydratation pr\u00e9alable et acclimatation \u00e9ventuelle :<\/strong> Verser d\u00e9licatement la quantit\u00e9 de levure d\u00e9sir\u00e9e dans 10 fois son poids d&#039;eau du robinet \u00e0 15-37\u00b0C (59-98,6\u00b0F). Remuez d\u00e9licatement pour \u00e9viter la formation de grumeaux. Laisser reposer 20 minutes et incorporer le levain dans la cuve de fermentation, puis homog\u00e9n\u00e9iser Apr\u00e8s r\u00e9hydratation, il est possible de proc\u00e9der \u00e0 une acclimatation en incorporant 50 % du levain au volume du mo\u00fbt et laisser reposer 10 minutes.
