\u6216\u8d77\u6ce1\u662f\u4f7f\u57fa\u9152\u53d8\u6210\u8d77\u6ce1\u9152\u6216\u534a\u8d77\u6ce1\u9152\u7684\u9636\u6bb5\uff0c\u8be5\u6280\u672f\u7684\u6210\u529f\u5f88\u5927\u7a0b\u5ea6\u4e0a\u53d6\u51b3\u4e8e\u9175\u6bcd\u53d1\u9175\u5242 (YSC) \u7684\u5236\u5907\u3002YSC\u53ef\u4ee5\u8fbe\u5230\u8db3\u591f\u591a\u7684\u9175\u6bcd\u7ec6\u80de\u4ee5\u4fdd\u8bc1\u6700\u4f73\u7684PDM\u5de5\u827a\uff0c\u5e76\u4e14\u5176\u5236\u5907\u4f20\u7edf\u4e0a\u9700\u8981\u51e0\u5929\u65f6\u95f4\u548c\u51e0\u4e2a\u6b65\u9aa4\u3002<br data-source=\"\n\n\">\u8fd9\u9879\u5de5\u4f5c\u7ecf\u8fc7\u4e09\u5e74\u7684\u5b9e\u9a8c\uff0c\u6700\u7ec8\u603b\u7ed3\u51fa\uff0c\u9009\u62e9\u4e00\u79cd\u65b0\u7684\u9175\u6bcd\u6765\u917f\u9020\u8d77\u6ce1\u8461\u8404\u9152\u3002\u5176\u53d1\u9175\u7279\u6027\u4f7f\u5f97\u4f18\u5316\u73b0\u6709\u7684YSC\u5236\u5907\u65b9\u6848\u6210\u4e3a\u53ef\u80fd\u3002<br 05\uff08\u6240\u9009\u9175\u6bcd\u7684\u5546\u54c1\u540d\uff09\uff0cYSC\u5236\u5907\u65f6\u95f4\u53ef\u4ee5\u4ece\u4e24\u6b65\u5de5\u827a\u4e2d\u76843-4\u5929\u7f29\u77ed\u4e3a\u4e00\u6b65\u5de5\u827a\uff08\u7ea630-36\u5c0f\u65f6\uff09\uff0c\u800c\u4e14\u4e0d\u4f1a\u5f71\u54cdPDM\u7684\u6301\u7eed\u65f6\u95f4\u6216\u8d28\u91cf\u3002<br data-source=\"\n\">\u7528\u4e8e\u917f\u9020\u767d\u8461\u8404\u9152\u7684\u9175\u6bcd\u5e02\u573a\u6709\u5927\u91cf\u7684\u53c2\u8003\u8d44\u6599\uff0c\u8fd9\u4e5f\u53cd\u6620\u4e86\u6240\u917f\u9020\u7684\u8461\u8404\u9152\u7684\u79cd\u7c7b\u7e41\u591a\u3002\u51e0\u5341\u5e74\u6765\uff0c\u4eba\u4eec\u5df2\u7ecf\u77e5\u9053\uff0c\u6839\u636e\u6240\u7528\u7684\u8461\u8404\u54c1\u79cd\u3001\u65b9\u6cd5\u548c\u917f\u9152\u6280\u672f\uff0c\u7cbe\u9009\u9175\u6bcd\u5728\u8c03\u8282\u8461\u8404\u9152\u7684\u611f\u5b98\u7279\u5f81\u65b9\u9762\u53d1\u6325\u7740\u4f5c\u7528\u3002<br data-source=\"\n\n\">\u53e6\u4e00\u65b9\u9762\uff0c\u5bf9\u4e8e\u8d77\u6ce1\u8461\u8404\u9152\u548c\u534a\u8d77\u6ce1\u8461\u8404\u9152\uff0c\u5e02\u573a\u4e0a\u53ef\u7528\u7684\u9175\u6bcd\u79cd\u7c7b\u66f4\u4e3a\u6709\u9650\u3002\u8fd9\u4e9b\u9175\u6bcd\u7684\u7279\u70b9\u662f\u65e0\u53ef\u5426\u8ba4\u7684\u53d1\u9175\u54c1\u8d28\uff0c\u5e76\u4e14\u4e00\u822c\u4e0d\u4f1a\u5728\u8461\u8404\u9152\u4e0a\u7559\u4e0b\u5f88\u5c11\u6216\u6839\u672c\u4e0d\u7559\u4e0b\u611f\u5b98\u5370\u8bb0\u3002\u8fd9\u4e00\u7279\u6027\u53ef\u4ee5\u66f4\u597d\u5730\u8868\u8fbe\u5728\u9648\u5316\u8fc7\u7a0b\u4e2d\u56e0\u9175\u6bcd\u81ea\u6eb6\u800c\u4ea7\u751f\u7684\u7b2c\u4e09\u5c42\u9999\u6c14\u3002<br \u3001\u518d\u53d1\u9175\u6216\u53d1\u6ce1\u3002\u8be5\u6280\u672f\u9700\u8981\u51c6\u5907\u4e00\u79cd<strong><em>\u9175\u6bcd\u53d1\u9175\u5242\uff08YSC\uff09\uff0c<\/em><\/strong>\u5176\u4e2d\u542b\u6709\u5927\u91cf\u9175\u6bcd\u7ec6\u80de\uff0c\u80fd\u591f\u6d88\u8017\u6dfb\u52a0\u5230\u57fa\u9152\u4e2d\u7684\u6240\u6709\u53ef\u53d1\u9175\u7cd6\u5e76\u5c06\u5176\u8f6c\u5316\u4e3a\u9152\u7cbe\u548c\u4e8c\u6c27\u5316\u78b3\u3002YSC\u7684\u8d28\u91cf\u5bf9\u4e8ePDM\u5de5\u827a\u7684\u6210\u529f\u81f3\u5173\u91cd\u8981\uff0c\u8be5\u5de5\u827a\u53ef\u4ee5\u4f7f\u7528\u4f20\u7edf\u65b9\u6cd5\u5728\u74f6\u4e2d\u8fdb\u884c\uff0c\u4e5f\u53ef\u4ee5\u6309\u7167Charmat\u6216Martinotti\u65b9\u6cd5\u5728\u5c01\u95ed\u7684\u7f50\u4e2d\u6216\u9ad8\u538b\u91dc\u4e2d\u8fdb\u884c\u3002\u7136\u800c\uff0c\u591a\u5e74\u6765\uff0c\u8bb8\u591a\u751f\u4ea7\u5546\u90fd\u5bf9\u4f20\u7edfYSC\u51c6\u5907\u65b9\u6848\u8fc7\u957f\u4ee5\u53ca\u9700\u8981\u4e0d\u65ad\u76d1\u63a7\u8be5\u8fc7\u7a0b\u8868\u793a\u62c5\u5fe7\uff0c\u751a\u81f3\u662f\u4ee5\u727a\u7272\u4ed6\u4eec\u7684\u4f11\u606f\u65e5\u4e3a\u4ee3\u4ef7\u3002<br (CIVC)(1) \u63d0\u51fa\u7684\u4f20\u7edf\u534f\u8bae\u6765\u5236\u5907 YSC\u3002<br Monitoring of live yeast population (Figure 5a), sugar content (Figure 5b), mineral nitrogen (Figure 5c) and density (Figure 5d).<\/strong><\/em><\/p>\n<p>In the YSC without an acclimatization phase, the decrease in sugar content was continuous and regular and did not show a slowdown (Fig. 5b). After approximately 30 hours, the YSC without an acclimatization phase had a sugar level of 50 g\/L and a density of 1010 g\/cm3 (Fig. 5d), which allows the yeasts to continue to multiply in the case where the YSC must be maintained for several hours, even a whole day, before the inoculation of the base wine.<\/p>\n<p>Regarding YAN, we observe a regular decrease in its concentration in the YSC without acclimatization, unlike the classic protocol which shows a sudden drop in YAN when the yeast enters the multiplication phase (Fig. 5c). For the classic two-phase protocol, lasting 72 hours, the medium becomes deficient in YAN after 60 hours, whereas with the YSC protocol without an acclimatization phase, 30 mg\/L of YAN remain after 36 hours. It is therefore essential to pay a particular attention to this parameter because a nitrogen deficiency can lead to a strong reduction in yeast activity, cell multiplication speed and fermentation kinetics.<\/p>\n<p>The results of these tests show that it is entirely possible to prepare a YSC in a single step and in less than half the time of the conventionally used protocol.<br \/>\nTo evaluate the behaviour of the yeasts obtained with a YSC protocol without an acclimatization phase, two PDMs were started, one at 14\u00b0C and the other at 18\u00b0C (Fig. 6). The fermentation kinetics of the newly selected strain (strain B) was similar to that recorded with the commercial Champagne strain (Fig. 6). Although there was a slight longer lag phase with the PDM carried out at 14\u00b0C with strain B, the fermentation kinetics were almost identical and made it possible to reach 5 bars of pressure simultaneously with the Champagne strain in approximately 20 days at 18\u00b0C and in approximately 40 days at 14\u00b0C.<\/p>\n\t\t<\/div>\n\t\t\t\t\t<\/div>\n\n\t\n<\/div>\n<div class=\"row\" \u7684\u5236\u5907\u65f6\u95f4\u4ece\u51e0\u5929\u7f29\u77ed\u5230 30-36 \u5c0f\u65f6\uff0c\u4f7f\u751f\u4ea7\u8005\u5728\u7ec4\u7ec7\u5de5\u4f5c\u65b9\u9762\u62e5\u6709\u66f4\u5927\u7684\u81ea\u7531\u5ea6\uff0c\u5c06\u589e\u6b96\u7f50\u7684\u53ef\u7528\u6027\u63d0\u9ad8\u4e8650%\uff0c\u4ece\u73af\u5883\u89d2\u5ea6\u6765\u770b\uff0c\u6709\u52a9\u4e8e\u964d\u4f4e\u9152\u7a96\u7684\u80fd\u6e90\u6210\u672c\u3002<br
