Why choose SafŒno™ Amplify TD-70 for winemaking? 

Climate change is presenting winemakers with new challenges that S. cerevisiae strains cannot always overcome. Non-Saccharomyces yeasts possess intrinsic properties that enable them to overcome these new hurdles.

Torulaspora delbrueckii is a non-Saccharomyces yeast naturally found on grapes and in must. The species is known to positively impact wine quality and to produce low levels of volatile acidity, SO2, acetaldehyde, diacetyl, and acetoin.

In this context, T. delbrueckii addresses a lack of mouthfeel and aromatic monotony in wines by introducing greater complexity (high production and expression of aromas like esters, fermentative aromas, and thiols) while reducing SO₂ dependence.

SafŒno™ Amplify TD-70 can be used on all types of wine, with a greater impact on varietal whites and rosés wines, and full-bodied, fruity red wines.

How does Torulaspora delbrueckii Improve Wine Aroma & Mouthfeel?

Isolated in France, in a Bordeaux vineyard, SafŒno™ Amplify TD-70 is the result of screening several hundred microorganisms from different wine-growing regions across three different vintages.   

In microvinification trials on Sauvignon Blanc musts, white wines produced with SafŒno™ Amplify TD-70 were characterized by a more complex aromatic intensity with notes of varietal thiols (citrus fruits and tropical fruits).

In microvinification trials on Gamay musts, red wines produced with SafŒno™ Amplify TD-70 were characterized by a more powerful and complex aromatic intensity with notes of red fruits (cherry and crushed strawberries).

In both trials, volume on the palate and the roundness were a signature of SafŒno™ Amplify TD-70.

In a trial conducted on Chardonnay grapes comparing five Torulaspora delbrueckii strains, chemical analyses revealed that wines fermented with SafŒno™ Amplify TD-70 exhibit significantly less volatile acidity production. The same trial confirmed SafŒno™ Amplify TD-70 maintained a robust yeast population during fermentation.

The aromatic profile of the wine fermented with SafŒno™ Amplify TD-70 had the highest preference score of the five candidates. The wine had greater complexity (aromas of yellow fruits, peaches, and apricots) and more mouthfeel compared to the control.

What are the key benefits of SafŒno™ Amplify TD-70 for winemakers?

Used in sequential inoculation with a selected Saccharomyces cerevisiae, SafŒno™ Amplify TD-70 will enhance the aromatic complexity and mouthfeel of the wine without altering its typicity or distinctive characteristics. This microbial association produces a controlled complex ecosystem in the must and during fermentation, ensuring complete alcoholic fermentation.

Pre-fermentative and fermentative abilities of SafŒno™ Amplify TD-70 include:

  • Alcohol tolerance observed: up to 13% vol.
  • Large spectrum of fermentation temperature tolerance: 13 to 25°C (53.6 – 78.8°F).
  • Copper tolerance observed: up to 9 mg/L.
  • SO2 tolerance observed: up to 3 g/hL (30 ppm of TSO2).
  • Medium nitrogen requirements: ratio YAN (mg/L) / Initial sugars (g/L) ≥ 0.8 – 0.9
  • High colonization and maintenance of the population in the musts and during alcoholic fermentation.
  • Very low production of undesirable compounds (volatile acidity, SO2 and H2S).

What are the best wines for SafŒno™ Amplify TD-70?

SafŒno™ Amplify TD-70 is suitable for the fermentation of all types of red, white, and rosé wines. We recommend it for full-bodied and fruity red wines in particular, as well as for enhancing the expression of varietal characteristics of white and rosé wines.

SafŒno™ Amplify TD-70 Recommended Usage and Sequential Inoculation

After rehydrating the yeast, gently pour the desired quantity of SafŒno™ Amplify TD-70 into 10 times its weight of tap water between 25°C (77°F) and 30°C (86°F). Gently stir to complete homogenization. Leave to rest for 20 minutes, then incorporate the yeast starter into the grapes or into the fermentation tank with homogenization.

SafŒno™ Amplify TD-70 recommended addition time:

  • White must: after pressing, during the filling of the settling tank for clarification.
  • Red must: during the filling of the tank for cold soak, followed by homogenization.

Despite a high ethanol tolerance (10 to 12% vol.), T. delbrueckii do not usually complete fermentation alone in a wine environment. Saccharomyces strains (inoculated or native) take over towards the end of fermentation.

For this reason, we recommend sequential inoculation after 2-3 days with a selected Saccharomyces cerevisiae strain to ensure healthy fermentation progress, clean aroma expression, and a clean fermentation finish under all conditions.
