The nolo trend

The nolo trend is showing no signs of slowing down. As consumers actively pursue new alternatives to their usual alcoholic beverages, brewers worldwide have been busy making lower alcohol brews, using a variety of techniques.

Industrials have been dealcoholizing for several years now, but such a process requires heavy upfront investment and is not suited to smaller producers. At Fermentis, we have been working on solutions for lighter beers for many years now.

Since the launch of SafBrew™ LA-01, back in 2018, we have been honing our skills on nolo beers, and it’s fair to say we now have a thorough understanding of the process and challenges of making high quality low alcohol beer.

Since we moved into our new home – the Fermentis Campus – we have been brewing batch after batch of low alcohol beer, experimenting with kettle souring and various hop additions, in order to learn and improve.

What’s next?

As one of the leading companies in no and low alcohol fermented beverages, we are continuously investigating ways to better produce these so-called “nablab” beers. One of the main challenges is always to give the beer the taste and feel of a standard beer: the best of both worlds.

In 2025, we teamed up with CBS, natural ingredients provider, to explore ways of creating flavour diversity in nolo beers. Our exploration turned into a partnership that was announced at Drinktec trade show in Germany.
