The Fermentis team is pleased to invite you to the 2022 editions of Fermentis Academy, sponsored by BSG, at Jack’s Abby Craft Lagers, Framingham, MA.

Throughout the day, you will interact with and ask questions to the Fermentis Team, who will present on a broad variety of yeast and fermentation topics. Our aim: To help you as a brewer create the beers you imagine through a better understanding of yeasts and the fermentation process.

The program of lectures includes the following topics:

- Yeast & fermentation basics: Yeast physiology, basics of fermentation and respiration, yeast taxonomy and diversity, yeast growth and multiplication, and more.

- Yeast management in breweries: Yeast management strategies. Active dry yeast production process. Pitching rate, direct pitching vs rehydration. Viability and shelf-life of active dry yeast and E2U concept.

- Latest research from Fermentis R&D: Applied research on the influence of brewing parameters (temperature, pitching rate, and wort gravity) on fermentation kinetics, production of volatile compounds and yeast sensory expression. Fermentis research on yeast/hop interactions and promotions of thiol release. Sour beer production methods, including kettle souring and use of “wild” yeast and Brettanomyces. Low alcohol beer production, with a focus on the use maltose negative organisms. As time allows, we will also cover additional hot topics in the market.

After the class, you are invited to join us from 5pm to 6pm for some social time to enjoy some complimentary beers and a casual brewery tour. This is a great way to finish the day after the seminar!

We ask each participant for an amount of $60 (+ service fee). This price includes participation for all the activities during the day, a light breakfast, lunch and participation in our social event (including complimentary beer).
