It all started when three very real monkeys visited the founders’ garden during their early days as homebrewers. Inspired by this serendipitous encounter, they decided to name their burgeoning craft brewery “Three Monkeys”.
After 10 years of crafting delicious and innovative beers, the team behind Three Monkeys opened their very own brewpub, Three Monkeys House. This vibrant hub is where their passion for beer meets unparalleled hospitality.
The goal: Crafting Great-Tasting Beers for All Typer of Consumers
Brewers Bernardo Costa e Silva and Gabriel Rocha are on a mission to make great-tasting beer accessible to all types of consumers.
“Brazilians are very open to trying new things,” says Gabriel, “so it’s important to us that we have something to offer each customer, whether they’re trying beer for the first time or are a real beer geek.”
For this reason, the team at Three Monkeys continually experiments with new styles and flavors. Their self-serve taproom has an ever-changing selection of exclusive and limited-edition brews, as well as their permanent labels.
“Our brewpub is very democratic,” explains Bernardo. “We have twenty taps, and our customers can serve themselves. This means they’re welcome to try a little bit of everything and figure out what they like.”
The brews: West Coast-style IPA, Blonde Ale and a Sour Beer
Three Monkeys’ bestselling beers include Classic IPA (a West Coast-style IPA), Golden Ale (a strong Blonde Ale), and I’m Sour (a fruited sour ale with dragon fruit and guava). The secret? All three beers are brewed with SafAle™ US-05.
Big fans of Fermentis products, Bernardo and Gabriel have been brewing with SafAle™ US-05 for decades, dating back to their homebrewing days. Their first-ever beer was a Belgian Golden Strong Ale, brewed with Belgian yeast. After the first few batches, Bernardo and Gabriel decided they wanted a more neutral flavor profile with more drinkability. They switched to SafAle™ US-05 and eventually perfected their bestselling Golden Ale.
Bernardo and Gabriel share an appreciation for the versatility and reliability of this strain. “It’s a yeast that you can always trust to have a neutral result and to highlight the adjuncts or ingredients that we want,” says Gabriel. “Whether it’s a more malt profile or a hop profile.”
The yeast: the legendary SafAle™ US-05
SafAle™ US-05 is an American brewers’ yeast that produces neutral and well-balanced ales. It forms a firm head and presents an excellent ability to stay in suspension during fermentation. This strain is ideal for creating clean and crisp American-style beers, as well as highly hopped beers.
“US-05 offers us a lot of security,” explains Gabriel. “When we have a fixed range of products, we always want to deliver the product in the same way to our customers.”
From brewpub to Brazil and beyond with SafAle™ S-04 and SafLager™ W34/70!
Not slowing down any time soon, Bernardo and Gabriel are busy creating new award-winning brews with Fermentis products. They recently released an Extra Special Bitter, made with SafAle™ S-04, which won a gold medal on Untappd and was rated by users as the best ESB in Brazil. Originally planned as a seasonal, draft-only offering, Three Monkeys will release this beer in cans due to its success.
Three Monkeys is also planning to bottle its house Pilsner. Named “True Gold”, this pure malt unfiltered lager is brewed with German hops and SafLager™ W34/70. “At Three Monkeys House, we serve it directly from the tank so customers can enjoy it as fresh as possible,” says Bernando. “It’s the top-selling beer in our brewpub, so now we want to share it with the whole country!”
